Zucca Pasta with Lemon Basil Pesto


A light twist on traditional pesto, this lemon basil zucca pasta has a nice lemony flavor paired with blistered tomatoes and roasted fennel.   • Pasta
  • Lemon Basil
  • Cherry Tomatoes
  • 1 Head of Fennel
  • Garlic Cloves
  • Lemon
  • Shredded Cheese of your choice
  • Salt, pepper, garlic powder, paprika
  1. Start by boiling the water for the pasta
  2. Preheat oven to 350 degrees and roast fennel and tomatoes with salt, pepper, garlic, paprika and olive oil for about 15-25 minutes
  3. Make the pesto in a blender with oil, shredded cheese, 2-3 garlic cloves, 1 bunch of Lemon Basil, and juice of 1 lemon
  4. Heat up pesto in a pan and add the cooked pasta and some leftover pasta water
  5. Add in the tomatoes and fennel and let it all combine together for 10-15 minutes and then enjoy! [/recipe]
